Smoothies are a staple after school snack for our 4yo Bubs; he LOVES them! Our 1yo Beebs loves them too!! 

I always make our smoothies Family sized. I love that they are a delicious and reliable serving of raw fruits, green vegetables, and nuts. On the go to keep them cool I use the U Konserve insulated jar.  In the summertime, I'll make a switch and turn these into smoothie popsicles using our Life Without Plastic, stainless steel popsicle molds.

Ingredients:

  • 2 ripe bananas (fresh or frozen)
  • 2 cups mango (fresh or frozen)
  • 2 cups blueberries (fresh or frozen)
  • 2 or 3 leaves kale or swiss chard (or whatever we have in the garden)
  • 1/2 cup cashews
  • 2 1/2 cups water

Combine all ingredients in a high-speed blender (we use Blendtec). This recipe makes a family sized portion 1 Liter (4 cups). 

Options:

  • If you are using a regular blender soak the cashews overnight or in hot (boiling) water for 30 minutes until soft (discard the water). You could also use cashew milk in place of the nuts and water.
  • I haven't tried blending kale or swiss chard in a regular blender, but I have been told that freezing it will make it softer and easier to blend.
